Spicy Diamond Cuts Recipe / Maida Biscuits Recipe


I would say that this recipe will be a easy but tasty snack which you can make for diwali..I made it in minutes and it tasted divine..So crispy and so yummy..I hope you will try this out and let me know how it turned out for you..Will share a sweet version of this soon..


Preparation Time : 10 mins
Resting Time : 10 mins
Cooking Time : 1 min per batch

Ingredients:

All Purpose Flour / Maida - 1 cup
Chilli Powder - 2 tsp
Salt to taste
Ajwain / Carom Seeds / Omam - 1/2 tsp
Cumin Seeds / Jeerakam - 1/2 tsp
Asafoetida / Hing / Kaya Podi - a pinch
Oil for Deep frying + 1 tsp
Water as needed
Chat Masala - Optional

Method:

Take flour, salt, chilli powder, ajwain, cumin, asafoetida in a bowl. Mix well.

Add in water and mix well.

Heat a tsp of oil till smoking and pour that into the dough and knead well.

Rest it for 10 mins. Now divide it into equal portions.

Take a dough and roll it into a thin sheet..The sheet should be really thin.

Now use a pizza cutter or a knife and cut diamonds from it. 

Separate them.

Heat oil for deep frying and drop these in hot oil.. Fry till golden.

Drain it into a bowl, sprinkle with chat masala if needed.

Serve.

Take all your ingredients


Take flour in a bowl


add in salt


add some ajwain


some cumin seeds


add in some chilli powder


add in some asafoetida


mix well


Add some water


knead it to a dough


Heat some oil till smoking


pour it into the dough


knead again to a soft dough


divide the dough into balls


take a ball and roll it out


I used my somas cutter, you can use pizza cuter or regular knife


once it is rolled


cut it into diamonds


like this


Then separate it lightly


drop it in hot oil,


fry till light golden, it will take just a minute


drain it


You can sprinkle it with some chat masala if you want
