Manathakkali Vathal Kuzhambu Recipe - Black Night Shade Gravy Recipe


Vatha Kuzhambu, My favorite dish to make for lunch. Recently I have started to use my vathakuzhambu podi for making that and it was a huge success. I have already made a sundaikai vatha kuzhambu using that powder and it turned out really great.


This is a vatha kuzhambu made with manathakkali vathal and I loved it so much. You can use chenarikkai vathal or any vathal as you like. Will share the different version soon. Keep checking my blog.


Preparation Time : 10 mins
Cooking Time : 35 to 40 mins
Serves : 5 to 6

Ingredients:

Gingelly Oil / Sesame Oil / Nalla Ennai - 3 tblspn
Onion - 1 medium size sliced thinly
Tomato - 1 medium size chopped
Garlic - 6 fat cloves peeled
Curry Leaves a fat sprig
Dried Manathakkali Vathal / Black Night Shade - 1/4 cup
Tamarind - 1 small lemon size  or 4 tblspn of tamarind pulp
Salt to taste
Sugar / Jaggery -  1 tsp
Water - 3 cup

Method:

Take tamarind in a bowl, add in 1/2 cup of water, soak it for 5 mins. Squeeze well to remove the pulp, strain and set aside.

Heat oil in  kadai. Add in sliced onions, garlic, curry leaves and saute it for 5mins.

Add in Tomatoes and saute for couple of mins.

Add in dried manathakkali vathal and saute for 5 mins.

Add in salt, sugar and vatha kuzhambu podi. Mix well for a min.

Add in tamarind pulp and water, bring this to boil. Simmer the kadai for 15 to 20 mins till it is thick and oil separates.


Serve with rice.

Take all your ingredients

Take tamarind in a bowl

cover it with water

mix well and strain the juice
Heat oil and saute onion, garlic and curry leaves

add in tomatoes too and saute for 2 mins

add in dried manathakkali vatha

now mix this up

saute this for 5 mins

now it is well fried

add some sugar

some salt

homemade vatha kuzhambu podi

saute for 30 sec

Add in tamarind pulp

some water

bring this to boil

once it reaches a good boil

cover the pan

simmer the stove

cook till oil separates

the curry with get thick in the mean time

serve
