Bread Vegetable Cutlet Recipe

Bread is a must have ingredient in my home. I always have a stock of them either in my fridge or in my freezer. And this recipe is one of the thing which i made so often before. It is so easy to put together, you just need few bread slices and few veggies. I have even made them without veggies just with sauted onions and spice powders.

This cutlet turn out to be crispy on the outside and fluffy in the middle. Since this is entirely made with bread, you dont have to breadcrumb it. So easy. Hope you will give this a try and let me know how it turns out for you..

Preparation Time : 5 mins
Cooking Time : 15 mins 
Makes : 12 to 15 cutlets


Bread Slices - 7 ( I used wheat bread)
Oil - 1 tsp + for deep frying
Fennel Seeds / Sombu / Saunf - 1 tsp
Onion - 1 medium size chopped very finely
Green Chillies - 1 chopped finely
Carrot - 1 small grated
Beans - 3 chopped very finely
Cabbage - 1/2 cup chopped finely
Chilli Powder - 1 tsp
Cumin Powder - 1/2 tsp
Coriander Powder -2 tsp
Salt to taste


Heat oil in a pan, add in fennel seeds and saute for a min.

Add in onions, chillies and cook till light golden. Add in ginger garlic paste and saute for a min.

Add in all veggies and salt. Cook till the veggies are cooked.

Add in spice powders and mix well. Masala done.

Now dip bread slices in water and squeeze them. Crumble them into a bowl.

Add the veggie mix in and mix well. Take a small portion from this and shape it into balls. Flatten it slightly.

Deep fry this in hot oil till golden. Drain and serve with ketchup.

Take all your ingredients

Heat oil in a pan

Add in fennel seeds

now add in onions, green chillies

saute till it gets light colour

now add in some ginger garlic paste

saute for a min or so

now add in all the veggies

cook this till raw smell leaves away and the 
veggies are done

Add in spice powders

some salt

mix well

veggie mix done

Now take a bowl with water

dip bread slices in water

remove it 

squeeze well

crumble it into a bowl

add the veggies mix

mix well

take a small portion

shape it into ball

flatten it out

all done

deep fry it in hot oil till golden

drain it
