A really simple kozhukattai recipe to make for vinayagar chaturti or for kids after school snacks..It is tasty as well as healthy too..I had this on drafts so decided to share this right after my uppu kozhukattai.

Preparation Time : 10 mins
Cooking Time : 25 to 30 mins
Makes : 20 kozhukattai
Ingredients:
Homemade Rice Flour - 1 cup ( You can use Store Bought too)
Jaggery / Gur - 3/4 cup
Water - 2 cup
Fresh Coconut - 1 cup grated
Cardamom Powder - 2 tsp
Method:
Take jaggery and 1 cup of water in a pan. Heat it so the jaggery is melted. Now strain this and add it to the same pan.
Add in more water and mix well.
Add in ghee, cardamom powder and coconut. Bring it to a boil.
Once it boils, simmer and add in rice flour slowly and mix well so no lumps are formed.
Now keep this cooking till it leaves the sides and comes together.
Remove this mix to a bowl and let it cool so you can handle.
Once it is cool knead once so it is smooth.
Grease your hands slightly with some oil and take small portion from it and press slightly.
Now repeat the same with the remaining dough.
Place it in a steamer and steam it for 8 to 10 mins.
Remove it and allow it to cool slightly before serving.

pour it back into the same pan, i like to give a quick rinse to the pan with some water |
add some more water |
now you got to bring this to a boil |
once it reaches a good boil |
add a good amount of cardamom powder..Main flavouring |
i like to add coconut right into the jaggery water |
add some ghee, for extra aroma |
now slowly add in the rice flour |
keep mixing so no lumps are formed |
It will start to leave the sides of the pan very quickly |
once it is clumped together like this |
remove it to a bowl and let it cool down |
now knead it slightly |
take a small portion |
press to make your finger impression in the kozhukattai |
repeat the same for the remaining dough |
Place it in a steamer plate..i used my idli plates |
Stack it up |
cover and steam |
all cooked |
