Rasmalai, my all time favourite sweets. I already have shared my way of making rasmalai. This is a updated one and i added some saffron in this too..Love this sweet to the core, plus my sister love it so much..I made my own rasgullas to make this sweet and it turned out to be super yummy...
This is so easy to make, you need patience alone to make this. Because you have to reduce the milk till it half and thick. Add generous amount of nuts to this and that makes it really tasty..

Preparation Time : 5 mins
Cooking Time : 35 to 45 mins
Serves : 6 to 8
Ingredients:
Full Fat Milk - 1 liter
Sugar - 1 1/4 cup or adjust
Saffron - 1 pinch
Cardamom Powder - 1/2 tsp ( optional)
Nuts - 1/2 cup chopped ( I used Almonds, Cashews & Pista)
Ghee - 1 tsp
Method:
Start by making rasgullas, you can use store bough ones too.
Take milk in a big pot and boil it till it is reduced by half. Once it has reduced, add in sugar and boil till it is little thick.
Soak saffron in some warm milk for 5 mins, Fry some nuts in a tsp of ghee till golden.
Now add in saffron milk, cardamom powder, fried nuts and raw pista. mix well.
Add in rasgullas and simmer it for 5 mins.
Once it is done. Transfer it to a bowl and chill it for 5 to 6 hours.
Serve chilled with extra sprinkling of pista

I fried some cashews and almonds in a tsp of ghee |
Add that in too |
now add in the rasgullas..Dont add any sugar water squeeze it and add |
Simmer it for 5 mins, turn off the heat and chill it |
Sprinkle with some pista and Serve chilled |
