I wanted to share a restaurant style actually it is thattukada style vegetable salna recipe in this blog. I make my vegetable korma or curry in a whole lot of ways, but i think i haven't shared much in this blog. Will do it soon..I will say this is one of the best salna you will ever make and taste.

This is a very very flavourful salna recipe. Actually the masala and the whole spices which we add in this really speaks through this curry. So never miss them.

Serves : 5 to 6
Ingredients:
For Sauteing & Grinding:
Oil - 1 tblspn
Fennel Seeds / Sombu / Saunf - 1 tblspn
Cinnamon / Pattai - 2 cm piece
Cardamom Pods / Yelakai - 4
Cloves / Krambu - 4
Cumin Seeds / Jeerakam - 1 tsp
Kalpasi / Black Stone Flower - 2 piece
Onions - 1 large sliced thinly
Ginger - 2 cm piece peeled and chopped
Garlic - 4 cloves peeled
Tomatoes - 2 large chopped
Coriander leaves - 1 cup
Coconut - 1/2 cup grated
For Salna:
Oil - 2 tblspn
Curry leaves - a handful
Carrots - 1 medium size chopped into small cubes
Beans - 6 chopped into small cubes
Potato - 1 peeled and chopped into small cubes
Cauliflower - 1 cup chopped into small cubes
Green Chillies - 2 slit
Chilli Powder - 2 tsp
Coriander Powder / Malli Podi - 1 tblspn
Turmeric Powder / Manjal Podi - 1 tsp
Cumin Powder / Jeera Podi - 1 tsp
Garam Masala Powder - 2 tsp
Salt to taste
Sugar - 1 tsp
Method:
Heat oil in a frying pan, add in all the whole garam masala and saute for a min.
Add in onions and saute till it is golden. Now add in ginger and garlic. Saute for a min.
Add in tomatoes and saute till it gets mushy. Now add in coconut and fry till golden.
Add in coriander leaves and give a stir. Take this whole thing in a blender and make it into a fine puree.
Now heat oil in a pressure cooker. Add in some curry leaves.
Add in the ground masala. Mix well and cook till oil separates from it.
Add in green chillies and the spice powders and saute for a min.
Add in vegetables, salt and sugar. Mix well.
Add in some water and bring it to a boil. Cover and pressure cook for 1 whistle. Simmer the flame for 5 mins. Turn off the heat and let the steam escape all by itself.
Open the cooker and serve.

now you to add some grated coconut, i had some chopped coconut so i added that |
fry that for 3 mins or so |
keep cooking till everything turn light golden |
add in some chopped coriander leaves |
mix well |
now take everything in a blender |
make it into a smooth puree |
Prepare your vegetables |
Heat oil in a pressure cooker |
add a handful of curry leaves and let it fry |
add in the ground masala |
add in spice powders |
season with some salt and sugar |
mix well and cook till oil separates |
add in chopped green chillies |
add in chopped vegetables |
mix well |
pour in some water and pressure cook |
Now oil will float on the surface.. |
serve |
