Tandoori Chicken one of my favourite, i make it quite often. I have already shared a version of it in this blog. This is a updated version of it. I want to post a new post with new pictures..Last weekend i made it and took pics of it.. You can check out the other grilled chicken recipes ..
Tandoori chicken or any tandoori foods are incomplete without the delicious mint chutney on the sides..I have few version of mint chutney in this blog, like this and this. But the chutney which is served with tandoori foods are a lots more creamy. You can check the recipe of the mint chutney here.

Preparation Time : 10 mins
Marinating Time : 6 hours or Overnight
Cooking Time : 45 to 50 mins
Serves : 5
Ingredients:
Chicken - 1 whole chicken cut into 10 pieces
Butter or Ghee for Brushing on top
Chat Masala for Sprinkling on top
For First Marination:
Chilli Powder - 1 tblspn
Salt to taste
Lemon Juice - 2 to 3 tblspn
For Second Marination:
Chilli Powder - 1 tblspn
Coriander Powder / Malli Podi - 2 tblspn
Cumin Powder - 2 tsp
Chat Masala Powder - 1 tblspn
Black Pepper Powder - 1 tsp
Turmeric Powder / Manjal Podi - 1 tsp
Red Food Colouring a pinch
Kasuri Methi Leaves - 1 tblspn
Method:
Take chicken in a bowl, make deep slits on them. Add salt, chilli powder and lemon juice to them and mix well. Leave this aside for 30 mins.
Now take second marination ingredients in a bowl and mix well. Pour this over the marinated chicken and mix well.
Leave this to marinate for 6 hours or over night.
Next day, remove it and let it come to room temp.
Preheat oven to 220 Degree C.
Now place the chicken over a foil lined baking tray and pop it in oven for 15 mins, remove it and flip over, apply leftove marination over it if you have any and bake it for 15 more mins.
Now remove it from oven, apply ghee all over it and bake it for 10 more mins.
Remove it and flip over and apply ghee all over it and bake it for 10 more mins.
Now remove it and set aside. Mean time, increase the oven temp to 250 degree C and set the mode to grill.
Place the tray near to the grill and cook it for 5 mins till you see some black spots over the chicken.
Remove it from oven, give a final glaze with ghee and sprinkle some chat masala over it.
Serve.

Actually i forgot to make slashes before i added the first marination on. So make deep slashes first |

Now lets make the second marination..Take yogurt in a bowl |
Add in spice powders |
add in ginger garlic paste |
add a good amount of dried fenugreek leaves |
season with some salt |

Pour this over the chicken |
Massage it well |
Take make the marination goes into the chicken and the slits which we made |
Done...Leave this to marinate for 6 hours atleast. you can leave it overnight, like i did |
Line a baking tray with foil |
Place the chicken over this |
Time to bake |
Remove it once half baked |
Flip over |
apply the remaining marination over this |
Bake again |
Now take some butter or ghee |
Brush it over the chicken generously |
Once it is all glazed with ghee |
Pop it in oven and bake for few mins |
Remove it and flip over, glaze it with ghee again |
Bake for few mins |
I finally grilled it for 5 mins...Then i glazed it finally with some ghee and sprinkled it with chat masala.. |
Remove it and serve with mint chutney |
