Bakery Honey Cake Recipe / Honey Coconut Cake Recipe


I love honey cake which you get in bakeries. It is juicy, moist, sweet and cool. Love it to the core. I always wanted to imitate that recipe at home but never had time on hand. But yesterday i was in mood to bake this and immediately got into action. To my surprise it turned out super good.

The cake was so soft, rich and buttery and it just absorbed the honey syrup beautifully. It taste heaven cold, so serve it cold. I loved the coconut which formed as a layer on top of the cake. It was so good. 


This is my first christmas cake recipe, you will be seeing more baked recipes in the coming future..

Preparation Time : 10 mins
Baking Time : 35 to 40 mins
Makes : 10 to 12 pieces

Ingredients:


For Cake:

All Purpose Flour / Maida - 1 cup / 120 grams
Sugar - 1/2 cup / 100 grams
Vanilla Essence - 1 tsp
Soft Unsalted Butter - 100 grams
Baking Powder - 1.5 tsp
Salt - 1/4 tsp
Eggs - 2
Milk - 2 to 3 tblspn

For Syrup:

Water - 3/4 cup
Honey - 1/2 cup
Dessicated Coconut - 1/4 cup
Red Food Colour a pinch Optional

(MY 1 CUP MEASURES 240 ML)

Method:

Preheat a oven to 170 degree C. Take a baking pan and butter the inside and sides. Sprinkle some flour and coat on all sides. Now tap off the excess flour and set aside.


Take butter, sugar in a bowl and use a beater to whip till creamy.


Add in one egg at a time and beat till fluffy and light.


Add in vanilla and soft over flour, baking powder and salt. Fold gently.


Add milk and fold gently.


Pour this into a prepared cake pan and bake for 35 to 40 mins or untill a tooth pick inserted comes out clean.


Remove it from oven and let it cool for few mins.


Now invert it to a plate and cut of the top if it too domed.


While the cake is cooling, make syrup. Take honey, water and coconut in a sauce pan and bring it to boil, simmer it for 5 mins. Remove from heat and add a touch of food colour and mix well.Set aside.


Now use a toothpick to make hole over the cake. Pour the syrup over cake and chill this for a hour before serving.


Slice and serve.

Prepare a cake..USE THIS METHOD
Take soft butter in a bowl


Add in sugar


use a beater to whip this till fluffy


Once it is fluffy


Add in one egg


Beat till creamy


Add in another egg


and some vanilla


beat till fluffy


now place a sifter over this


add in flour


add in baking powder and salt


sift it out


add in milk


fold well


Place the batter into the tin and bake it


While the cake is baking, make syrup


Take water in a sauce pan


add in honey


add in desiccated coconut


mix well


heat this


bring it to boil and simmer for 5 mins


take it off the heat and add some food colour if you need


syrup done


Now take cake is baked


Once it is cooled, remove it from tin and slice of the top if it is too much puffed.


use a toothpick to prick


take the syrup


spoon it all over the cake


now chill this for a hour


slice and serve
