I made this few days back and loved the taste of it a lot.. It is quite simple to make but taste exotic. There is no much spice powders in this recipe, thats what i love about this.

This pulav has coconut milk in it, this coconut milk makes it more aromatic and flavourful. And the addition of freshly ground spices take it to a whole new level.

Preparation Time : 10 mins
Cooking Time : 35 to 40 mins
Soaking Time : 30 mins
Serves : 4
Ingredients:
Basmati Rice - 2 cup
Chicken - 1/2 kg with bone
Water - 2 cup
Oil - 1 tblspn
Cinnamon / Pattai - 2 cm piece
Cardamom / Yelakai - 5 crushed
Cloves / Krambu - 5
Bay Leaf - 1
Pandan Leaf / Biryani Leaf - 1 optional
Onions - 2 large sliced thinly
Green Chillies - 6 to 8 chopped
Tomatoes - 1 chopped
Coriander Leaves - 1/2 cup chopped
Mint Leaves - 1/2 cup chopped
Salt to taste
To Grind :
Fennel Seeds / Sombu / Saunf - 1.5 tblspn
Black Pepper - 1 tblspn
Method:
Wash and soak basmati rice for 30 mins. Drain it and set aside,
Powder, fennel and pepper, set aside
Heat ghee and oil in a pressure cooker, add in cinnamon, cardamom, cloves and bay leaf, let them sizzle.
Add in onions, green chillies in the ghee and saute till golden.
Once it is golden, add in ginger garlic paste and saute for a min.
Add in chicken, keep sauteing till it gets nice colour.
Add in salt, tomatoes, mint, coriander and mix well.
Add in the powdered spice, garam masala and mix well.
Add in rice, coconut milk and water. Add pandam leaf to the water if using.
Bring this to a boil, simmer, cover and cook for 1 whistle. Turn off the heat and let the steam escape by itself.
Open the cooker and fluff up the rice.
Serve.

pour in water |

I had this biryani leaf / pandan leaf on hand, so i added that in..You can skip this.. |

now bring this to a boil |
|
once it reaches a boil |
|
cover the cooker and simmer the cooker |
|
