Brioche Buns Recipe / Braided Brioche Recipe

I am telling you this is one of the best bun in the world. So soft and so fluffy. Please guys before starting the post, i am telling you, dont ask me substitutes for anything. Because it has to be done exactly like this..I am not sure about the substitutes of eggs in this..But i will surely share a eggless brioche recipe soon.

This is so easy to make, the dough with take just few mins to make. The dough is so easy to work with, you can shape it into any shapes..

I made a briaded bread and loved it so much..I made a three braided bread. I will share a separate post about how to make 5 and 7 braided bread soon.

Preparation Time : 10 mins
Resting Time : 1.5 to 2 hours
Baking Time : 15 mins

All Purpose Flour / Maida - 3 1/2 cup / 420 grams
Water - 1 cup / 240 ml
Milk - 3 tblspn
Dry Yeast - 2 tsp
Sugar - 2 1/2 tblspn
Egg - 1 
Salt to taste
Unsalted Butter - 50 grams (softened)


Take water in a microwave safe bowl, add in milk and butter and microwave it for 10 to 20 sec. It should get nice a warm..Should be luke warm. The butter wont melt.

Now add sugar to it and mix well. Now sprinkle over yeast and let it sit for 5 mins till it is activated.

Now take flour, salt in a bowl and mix well.

Pour the wet ingredients into the bowl and mix well

Add in egg and mix well.

Now knead this for a good 5 mins till the dough is soft and springy.

Cover it and let it rest for 1 to 1.5 hour till it is doubled in size.

Now knock back the air and knead once. Flatten it and divide it into equal portion. 

Take one portion and shape it into ball. Flatten it slightly.

You can even braid the dough or do it in any shape. Arrange this in a parchment lined baking tray and cover it fr 30 mins till it puffed and doubled in size.

Preheat the oven to 200 degree C.

Now brush the top of the buns with some egg and sprinkle it with sesame seeds

Now bake this for 15 mins. Remove it and let it cool a little before serving.

Take all your ingredients

Take water in a microwave safe jug

add in milk

and butter

i popped it in microwave for 10 to 20 sec till it is luke warm,
the butter need not melt throughly

now add in sugar and mix well

add in yeast and mix well..Let it sit for 5 mins.

Now the yeast is activated
Take flour in a bowl

add in salt

mix well and make a well in the center

now add the yeast mix

add in egg

mix well

now knead this for a good 5 mins

it will form into a smooth and soft dough

Now place this in a large bowl

cover it with a plastic wrap and let it rise

look beautifully it has risen

knock back the air and give a knead

now flatten it like a disc

cut it into equal portions

take a ball

roll it into a smooth ball

place it in a parchment sheet lined baking dish..
I used my silicon mat

flatten it slightly

Now take another portion

Roll it thinly

give a twist like this

now tuck one side under

and other side upper..pinch them as well


now lets make braided broiche..take three balls

roll them thinly

pinch the top

now start braiding, like you braid your hair

go on

go on

go on..

i cut off the top and bottom to give a finished look


arrange all your buns and bread in a tray

cover it again and let it rise

I would suggest you to use a bigger pan or do it in batches.Because since i placed them quite close, as the buns
baked they stuck to each other..

now crack open a egg

beat them up

brush on top generously

Sprinkle with seeds

all beautifully baked


They were just soft as cloud

look how soft it is..
