Lamington Cake Recipe

Source WIKI: A lamington is a dessert of Australian origin. It consists of squares of sponge cake coated first in a layer of traditionallychocolate sauce, then in desiccated coconut. Lamingtons are sometimes served as two halves with a layer of cream orstrawberry jam between, and are commonly found in South African and Australasian outlets such as cafes, lunch bars, bakeries, home industries and supermarkets. A raspberry variety is also common in New Zealand, while a lemon variety has been encountered in Australia.

This is one cake which was always in my mind for quite a long time..But i totally forget about it as days pass by. But yesterday my dear friend sujitha posted this on her blog, which reminded me instantly. I had all the ingredients on hand and immediately gave it a shot. I modified the recipe to my taste and to my surprise it was like DELICIOUS..Loved it to the core. I took couple of pieces for me and hubby and packed the whole thing for my sister, because she has been asking me to bake something for her college mates. I am sure they will love it too.

This cake is like a soft rich vanilla cake dipped in a chocolaty sauce and coated in dessicated coconut. If you are a coconut lover like me, you cannot resist when you roll it in coconut, because the coconut smell just wafts through..It was heaven..

Preparation Time : 10 mins
Baking Time : 20 to 25 mins
Makes : 9 Squares


All Purpose Flour / Maida - 1 cup / 120 grams
Granulated Sugar - 1/4 cup powdered / 50 grams
Baking Powder - 1 tsp
Baking Soda - 1/4 tsp
Salt a pinch
Unsalted Butter - 70 Grams Softened
Egg - 1 
Vanilla Essence - 1 tsp
Milk - 1/2 cup / 120 ml

For Chocolate Coating:
Icing Sugar / Confectioners Sugar - 1.5 cup
Cocoa Powder - 2 tblspn
Water - 1/4 cup
Unsalted Butter - 1 tblspn
Dessicated Coconut - 1.5 cup or as needed


Preheat oven to 180 Degree C.

Take flour, salt, baking powder, baking soda in a bowl. Mix well and set aside.

Take butter, sugar in a bowl and beat till creamy and fluffy.

Add in egg and vanilla, beat again and till fluffy.

Now add in flour mix and milk alternating, ending with flour.

Pour this into a prepared pan. Bake it for 20 to 25 mins.

Remove it and let it cool completely. once it is cooled, slice the dome off and cut into squares.

Now make chocolate glaze, take water and butter in a bowl, microwave it for 30 sec till the butter is melted.

Take sugar, cocoa in a bowl and mix well. Add water butter mix slowly and mix well. The glaze should be little thick.

Now take a cake and dip it in glaze and coat in coconut.


Take all your ingredients

Take flour in a bowl

Add in baking powder

and some baking soda

add in some salt

mix well and set aside

You have to use soft butter, My butter was too cold,
so i popped it
in microwave to soften it, but it melted a little.

Add in powdered sugar..I powdered some
granulated sugar in blender till it is fine

start beating

beat till it is fluffy

add in egg

and some vanilla

beat till it is fluffy

now add in a portion of flour mix

add in some milk

add in some more flour mix

add in the remaining milk

now add the last bit of flour in

fold gently

I prepared pan by buttering and dusting it with flour

Pour the batter in

Spread it evenly

Bake it till done

Remove it to a plate and cool it down

Take the icing ingredients

Take water in a microwave safe bowl

add butter in

melt it in microwave for 30 sec till the butter is melted

Take icing sugar in a bowl

add in cocoa powder

mix well

add the water butter mix

mix well till it is smooth

the consistency should be little thick not too thin

I sliced the dome from the cake

slice it into squares

Now time to assemble

take a square of cake,

dip it in chocolate mix

coat on all sides

remove it

now take some desiccated coconut in a plate

place the cake square in

coat on all sides

remove and set aside.
