White Vegetable Kurma Recipe / White Veg Kurma Recipe



This is my go to vegetable kurma..It is so tasty and pretty mild, since there is no spice powders in it. I like to add some white pepper powder in this. This is maha's favourite i feed this for her with rice and she loves it. There is another version of white kurma which they serve in resturants, it has cashews, cream in them will share it soon.

Preparation Time : 10 mins
Cooking Time : 25 to 30 mins
Serves : 4

Ingredients:


Oil - 1 tblspn

Cumin Seeds / Jeerakam -  1/2 tsp
Paneer - 100 grams cubed
Onions - 1 medium size chopped finely
Carrot - 1 medium size chopped
Beans - 6 chopped
Cauliflower - 1/2 cup chopped
Peas - 1/2 cup (i used frozen)
Soya Chunks - 1/2 cup cooked
Garam Masala Powder -  1 tsp
White Pepper Powder - 1.5 tsp
Salt to taste
Sugar - 1 tsp
Coriander leaves for garnishing

To grind :

Fresh Coconut - 1/4 cup grated
Garlic - 2 cloves peeled
Ginger - 1 inch piece peeled
Fennel Seeds / Saunf / Sombu - 2 tsp
Cinnamon / Pattai- 1 small piece

Method:


Take grinding ingredients in a blender and make it into a fine puree. Set aside.


Heat oil in a pan. Add in paneer cubes and fry it lightly and set aside.


Add in cumin seeds, onions and saute till golden.


Add in carrot, cauliflower, beans and toss well in oil.


Add in salt and mix well. Cover and simmer till the veggies is done.


Now add in peas, soya and mix well. Add in pepper and garam masala powder and mix well.


Pour water and bring it to boil. Add in ground masala, sugar and mix well.


Simmer for 5 to 8 mins.


Add in coriander leaves and serve.

Take all your ingredients


Take coconut in a blender


add cinnamon


and fennel seeds


in goes some ginger and garlic


puree till smooth


Heat oil in a pan


add in paneer


fry lightly


remove it and set aside


Now in the remaining oil, add in cumin


add in onions


saute till golden


add in carrot, beans, cauliflower


add in salt


toss well


cover and simmer


now the veggies are cooked


and in cooked soy chunks


peas


fried paneer


white pepper powder and garam masala powder


mix well


pour in water


add in some sugar


add in coconut masala


mix well and simmer for a while


serve
