I love banana cake, i have already posted a recipe here..But this is a health variation of that. It has no butter, it is made with wheat flour and it has sunflower seeds and cashewnuts in this..so this is like super food. Plus it is eggless. In my opinion, banana cake dont need eggs, because of the bananas the cake stays together and the texture will be soft. Any how i will share banana cake with eggs soon..

The recipe calls for sunflower seeds and luckily i had them on hand, i bought couple of big packets of them during my last trip to supermarket. I got them because i thought i would add them to my granola..But it is optional, you can leave it out or simply add flax seeds or whatever seed you have on hand.

Ingredients:
Whole Wheat Flour / Atta - 1.5 cup / 180 grams
Sugar - 1/2 cup / 100 grams
Ripe Banana Puree - 1 cup
Baking Soda - 1/2 tsp
Baking Powder - 1.5 tsp
Oil - 3/4 cup
Vanilla Essence - 2 tsp
Sunflower Seeds - 1 tblspn (optional)
Cashewnuts - 1/2 cup
Method:
Preheat oven to 180 Degree C. Oil a loaf pan and set aside.
First sift wheat flour, baking soda and baking powder. Set aside for a min.
Now take oil, sugar and vanilla in a bowl and mix well.
Add in pureed banana and mix well.
Now add in the flour mix and sunflower seeds and cashewnuts. Mix well to a smooth batter. It will be thick.
Now pour this thick batter in the loaf pan and bake for 40 to 45 mins.
Remove it from oven and let it cool for 10 mins.
Now invert it to a plate, let it cool for 30 mins, slice and serve.
